Method:

Step 2: Clean the mutton and cut it into large pieces.
Step 3: Place the mutton and two slices of ginger in a pot, add water, and bring to a boil over high heat.
Step 4: As the water gradually boils, the scum will rise to the surface. Continue boiling for a few more minutes.
Step 5: Once the scum has risen completely, remove the mutton from the pot.
Step 6: Pour an appropriate amount of water into a casserole, add the blanched mutton and remaining ginger slices, bring to a boil, then reduce heat and simmer for about 1-2 hours.
Step 7: While the mutton is cooking, rinse the red dates, Angelica sinensis, Codonopsis, and Astragalus separately.
Step 8: Remove the shell and core from the longan, and use only the pulp.
Step 9: Add the prepared medicinal materials to the mutton soup and stew for about 1 hour.
Step 10: When the mutton is tender, add the goji berries and cook for about 10 more minutes.
Step 11: Finally, season with salt and turn off the heat.
Step 12: Serve the soup.
Cooking Tips: 1. Cooked Angelica sinensis and Codonopsis can be eaten directly. If you do not prefer to eat them, you can wrap the medicinal materials in a cloth and remove them after cooking. 2. The stewing time can be adjusted according to the desired texture.
