Ingredients for Steamed Grouper: One grouper (1.5 jin), a section of green onion, 50g ginger shreds, 2 spoons of steamed fish soy sauce, a pinch of white sugar, an appropriate amount of corn oil (cooking oil), 3-4 spoons of white water.
Method for Steamed Grouper:
Step 1: Fresh grouper, clean and prepare (remove internal organs, gills, and scale).
Step 2: Ginger is cut into shreds.
Step 3: Pour a spoonful of oil into the dish.
Step 4: Spread the oil evenly across the entire dish.
Step 5: Score both sides of the fish and place in the dish, season with an appropriate amount of salt and spread evenly (also apply some salt inside the fish cavity).
Step 6: Place ginger shreds on the scored areas and inside the fish cavity.
Step 7: Boil water in a steamer.
Step 8: Place the fish in the steamer.
Step 9: Steam for 10 minutes.
Step 10: Shred the green onion.
Step 11: Put sugar in a bowl.
Step 12: Add steamed fish soy sauce.
Step 13: Mix in 2 spoons of white water to create the sauce (prepared soy sauce).
Step 14: Heat a base layer of oil in a pan until it reaches 30% heat.
Step 15: Add shredded green onion.
Step 16: Pour in the prepared soy sauce.
Step 17: Bring to a boil.
Step 18: Drain the water from the steamed grouper and transfer to a new fish dish (the oil was applied earlier to prevent sticking when changing dishes).
Step 19: Pour the cooked sauce over the steamed grouper.
Step 20: Serve.
Step 21: For those who like spicy food, you can also sprinkle chopped green onions and Thai chili as a garnish.
