Step 1: When purchasing the pig’s trotter, have the vendor burn off the bristles. Once home, soak it in hot water and scrub the surface thoroughly with a cleaning brush, then set aside! Step 2: Split the pig’s trotter in the middle to separate the trotter and the pork elbow, and score the elbow. Step 3: Add cooking wine to cold water and blanch the elbow and trotter.
