Potato-Braised Pork Ribs Recipe

Ingredients for Potato-Braised Pork Ribs: Pork ribs 600g, Potatoes 2, Ginger slices 4, Garlic cloves 4g, Soy sauce 20g, Oyster sauce 10g, Cooking wine 10g, Salt 2g, Dark soy sauce 5g, Rock sugar 10g, Water as needed.

Step 1: Purchase and wash the pork ribs, then cut them into small pieces.


Step 2: Boil in water for 4 minutes, stirring occasionally to remove blood water.


Step 3: Rinse with cold water to clean off any residue.


Step 4: Peel the potatoes and cut them into irregular chunks, not too large.


Step 5: Heat a pan with some oil, add rock sugar and melt over low heat until caramelized.


Step 6: Add ginger and garlic to sauté, then pour in the ribs and stir well. Add cooking wine and stir-fry briefly.


Step 7: Add dark soy sauce, soy sauce, and oyster sauce, stir-fry until well coated.


Step 8: Pour in water to cover half of the ribs, cover the pan and simmer for 10 minutes. If your lid has vents, you may need more water.


Step 9: Open the lid, add the potatoes, stir well, cover again and simmer for 10-15 minutes.


Step 10: Serve when the sauce is thick and the potatoes are soft and the ribs are fragrant.
